Im afraid working with humans in the UK is not possible (as far as I know). We simulate experiments using pigs where possible, or smaller carrion such as rabbits or mice. People around the world use different animals, what ever is locally available.
In the USA, there are two locations which allow forensic scientists to work on donated human remains (you may have heard of one commonly known as the Body Farm) – one is very lucky to be able to work at these (my boss has, and I’m jealous!). These facilities allow us to compare our findings on animals to real humans, making our research more reliable and robust.
